It’s cool and refreshing – perfect for a warm summer day. You can easily double the recipe and it makes a great covered dish to take to a cookout with family and friends. Don’t be afraid to try it even if you’re not a fan of cottage cheese. I don’t care for cottage cheese on its own, but it provides great texture and a hint of flavor within this salad. I have always loved salads of all kinds, and this one is another family favorite. You can substitute one or two of the ingredients to suit your taste, and it will still be delicious. 8 oz Small curd cottage cheese 8 oz Whipped cream 3 oz Orange Jello powder 1 Small can pineapple, drained and cut into small pieces 1 Large Can mandarin oranges, drained 1 1/2 C Miniature marshmallows Ingredients 2 Stalks broccoli, cut into bite-size pieces 1/2 C Chopped onion 1/2 C Chopped celery 1/2 C Raisins 1/2 C Sliced almonds 6 Slices cooked and crumbled bacon Salad 1 C Mayonnaise 1/2 C Sugar 1/4 C White vinegar In a small bowl, whisk together the 3 dressing ingredients. Dressing Directions In a large bowl, combine cottage cheese and whipped cream. Mix in the Jello-O powder until well blended. Fold in pineapple, mandarin orange, and marshmallows. Chill in the refrigerator for at least 1 hour. Directions Combine all salad ingredients in a large bowl. Pour on the dressing, toss, and serve.
