Pork Loin •2 T Olive Oil, divided •1 C Finely chopped onions •4 Cloves Chopped Garlic •3 T Cracked peppercorns coarsely ground, divided •½ C Red Wine •2 C Beef broth •½ C Heavy Cream •½ C Chopped fresh parsley •2 tsp Fresh Thyme • Salt to taste 1 Preheat oven to 425 degrees. Season pork loin with salt and a liberal amount of the coarsely ground pepper, pressing into the loin to make sure it sticks. Heat a large skillet over medium-high heat. Once hot, add 1 T olive oil and heat for 1 minute. Add the pork loin and cook 4-5 minutes, turning each minute until all sides are browned. 2 Remove from skillet and place on greased baking dish or sheet pan. Place in oven and bake for about 15 minutes, or until internal temperature reaches 140 degrees. Remove from oven and cover loosely with foil to keep warm. 3 In the skillet used to brown the loin, heat 1 T of olive oil over medium heat. Add the chopped onions and saute for 2 minutes. Add the chopped garlic and saute for 1 minute. Add the red wine, and as it boils deglaze the pan by scraping the browned bits from the bottom of the pan with a wooden spoon. Once the wine has almost cooked away, add the beef broth and turn heat to medium-high. Boil the sauce down for 4-5 minutes. Pork Loin with Burgundy Peppercorn Sauce 4 Pour in the heavy cream and resume boiling. Boil down until you can draw a wooden spoon through the center of the skillet and see a noticeable trail. Turn off the heat and stir in the parsley, thyme, and remaining black pepper. Taste for salt and add if needed. 5 Cut the pork loin on a slight diagonal in ½” to 1” slices, and spoon the sauce over to serve.CommunityCouponMagazine.com • Spring 2025 • In homes February 24, 2025 - May 18, 2025 9 223 S.
